Using a brilliant blogger friend's recipe, my multi-talented husband whipped us up some Pho last night. And yes, Girlfriend, I let him cook and I did the dishes!
It was TA-STY!

What the Pho is for dinner?
Pho (pronounced "fuh") is a beef and noodle soup that is a staple of the Vietnamese diet and is becoming increasingly popular worldwide. It is a hearty dish, full of fresh flavors and bright colors and so versatile that it can be tailored to meet the tastes of almost anyone.
Soup ingredients:
2 cans of beef broth or stock (preferably low sodium)
1 medium white or yellow onion, thinly sliced
3 slices of fresh ginger (or 1 teaspoon of ground ginger)
1 tablespoon whole black peppercorns (or 1 teaspoon of ground pepper)
1 clove garlic, peeled and squished (or 2 teaspoons of garlic powder)
1 medium-sized sirloin steak, raw and thinly sliced
8-oz. package dried rice noodles
Accessories (dress it up with any or all of these):
torn fresh basil leaves
fresh mint sprigs
cilantro sprigs
fresh jalapeño pepper, thinly sliced
cut up lime wedges
handful of bean sprouts
Hoisin sauce
Soy sauce
Hot pepper sauce
Directions:
In a large pot, add broth, onion, ginger, peppercorns and garlic. Bring to a boil then reduce heat to medium and cover. Simmer for about 15 minutes, stirring occasionally.
Soak rice noodles in hot water (do not boil) for 15 minutes or until softened then drain (do not rinse with cold water.)
While those ingredients are cooking, chop up the garnish ingredients and place them in piles on a large plate in the middle of the dinner table (or the living room coffee table if you're my family).
Place equal amounts of noodles in soup bowls and cover with raw beef slices.
Ladle hot broth over noodles and beef (the beef slices will cook in the hot broth – this is why it's important that the broth is boiling hot and that the pieces of beef are small and thin.)
Dress it up as you see fit .
Note: this can also made with chicken, shrimp or tofu instead of beef – it all depends on what you like – if you do use chicken, make sure to slice it as thin as possible so that it cooks all the way through because Salmonella is decidedly not delicious.
Tip: A hint for slicing meat – pop it in the freezer for about twenty minutes first and it will be firmer and easier to slice.



I only caught a few months' worth of a glimpse of The Fabulous, Amazing Sinner G toward the tail end of her family's two-year stay in Savannah, but I can say her scheduled departure of TOMORROW is already making a dent.
This is of course THE Sinner G whose expertly promoted debut roller derby bout brought in record crowds to see the Savannah Devils earlier this month.
